Winemaker Angus Vinden from Vinden Estate will be showcasing his award-winning wines alongside a bespoke 5-course menu designed by head chef Alastair Waddell & wild food researcher Peter Hardwick after a day foraging in the Byron Hinterland. Awarded 5 hats and named the ‘Dark Horse Winery’ by James Halliday in 2018, Vinden Estate balance tradition with innovation by utilising traditional methods of open fermentation, hand plunging and basket pressing, combined with new age winemaking techniques to create a distinctive range.
