Wednesday 11 July. Celebrated chef, gardener and lover of all things that nourish, Martin Boetz, will be joining head chef Alastair Waddell and forager Peter Hardwick for a one-off Thai Wild Harvest with a menu exploring Australia’s underutilised ingredients. Former Longrain executive chef and a pioneer of Thai food in Australia, Martin now brings regional growers together and harvests his own produce at Cooks Co-Op; his farm overlooking the Hawkesbury River in Sackville. Martin will share his soil to plate philosophy and inspiration from the seasonal Thai produce available at local Palisa Anderson’s Boon Luck Farm.
